The reason why the elderly couple went to bed was because they were “exhausted from a wild night of partying.” They were unaware that the ship hit an iceberg and was taking on water.
The scene is the biggest form of “dramatic irony” you have ever seen! The two are lovingly embracing in bed and are blissfully unaware that there is a wave of water coming into their living quarters.
As for the other scene, the mother is putting her two children to bed because that’s what a good mother would do! Her children are up way past their bedtime and she is quietly lulling them to sleep.
Sure, the elderly couple might have decided to die together because they didn’t want to take up a seat for the lifeboats that could go to someone else. The mother is in poverty and would be denied a seat on the lifeboats thanks to the social class standards of the turn of the 19th century, but no. There was certainly no urgency to leave a boat when you are in the middle of the Atlantic Ocean and the ship is sinking.
